Bring to a boil. Reduce the heat to low and simmer for 15 minutes or until the chiles are soft. Set aside until ready to use.</span></p>

Saute the chicken until cooked through, approximately 7 to 9 minutes. Remove the chicken from the pan and place in a medium bowl. Add the onions to the same pan along with a generous pinch of salt, decrease the heat to medium-low and sweat for 4 to 6 minutes. Add the garlic and oregano and cook until the onions are tender, 2 to 3 minutes more. Add the chicken back to the pan and remove from the heat.</span></p>
<p style="margin: 0.0px 0.0px 7.0px 0.0px; line-height: 21.0px; font: 14.0px Georgia;"><span style="letter-spacing: 0.0px;">Spray a 13 by 9-inch glass baking dish with non-stick spray. Place 1/2 cup of the sauce into the bottom of the dish. Dip 4 tortillas into the remaining sauce and lay them into the bottom of the dish. Cut 1 of the tortillas in half to evenly cover the bottom of the dish. Top this with half of the chicken mixture and 1 cup of the cheese. Starting with 4 more tortillas, repeat the layers, ending with the last 4 tortillas on top. Pour remaining sauce over the dish and top with remaining 1 cup of cheese.</span></p>

Remove the foil and bake an additional 10 minutes, or until cheese on top is bubbly.</span></p>

Did you know pepper was first cultivated in India in about 1000 B.C. and wasn’t used for seasoning?  The original uses of peppercorn were medicinal.  People would ingest the hot, zesty spice to aid in breathing and decongestion believe it or not.  Peppercorn causes an increase in mucous membrane secretions, thus opening airway passages and acting as an expectorant.  It was also commonly used as an external ointment for hives.  Not to mention, a mixture of pepper and water lightly sprayed on plants will deter ants and other insects from feeding in your garden and making trails in your pathways. </span></p>
<p style="margin: 0.0px 0.0px 10.0px 0.0px; font: 11.0px Lucida Grande;"><span style="letter-spacing: 0.0px;">Here’s another fun fact for you:  Black, white and green peppercorns are all from the same plant, only they are in different stages of growth, similar to that of bell peppers.  Ever wonder why you can’t find red and yellow bell pepper seeds or seedlings?  If you let either alone long enough on the plant, the end result will be a variety of colors.  Unrelated to black peppercorn are the pink berries and pink peppercorn.  Pink berries, imported from Madagascar were formerly banned by the FDA but now considered safe for consumption.  Pink peppercorn isn’t recommended and can be toxic in large amounts.  For safety sake, we’ll stick with the black, white and green peppercorn varieties. </span></p>

Whisk together flour, baking soda, cinnamon, oats and salt in a medium bowl. In a mixer bowl with paddle attached, combine butter, oil and sugars and mix on high about 1 minute. Add egg, banana and vanilla and continue to beat an additional minute. Add flour mixture and beat on low speed until it is incorporated. Add cereal, cranberries, apricots and walnuts, then mix on low just until incorporated. Line a cookie sheet with parchment paper. Use a small scooper to form a ball, about 3 tablespoons for each ball, and place on cookie sheet. Flatten cookies until about 1/4 inch thick. Bake 10-12 minutes, until cookies are soft. Cool and store in a container.</span></p>

<p style="margin: 0.0px 0.0px 12.0px 0.0px; font: 14.0px Georgia;"><span style="letter-spacing: 0.0px;">Place broccoli, onions and green pepper in microwave and cook until crisp tender, about 3 minutes. Then, add mushrooms to the bowl. In a 9X13 non-stick or greased pan place a layer of bread 3 slices cut into bite sized pieces. Top with a third veggies, ham and cheddar cheese. Repeat layers, saving some cheese for the top. Then, beat eggs and mustard and pour over the layered mixture and top with remaining cheese. May set in refrigerator for a few hours or overnight if desired. Bake at 350 for about an hour.                         Check after 45 minutes. It is done when a knife placed in the center comes out clean. Let set a few minutes before cutting. Cut into 12 squares. If desired top with sauce of healthy mushroom soup, make slightly thick with 1/2 can skim milk.  This raises like a souffle and becomes golden brown.</span></p>

Combine the olive oil, lemon zest, lemon juice, garlic, rosemary, and 2 teaspoons pepper in a small measuring cup. Place the chicken in a ceramic or glass dish just large enough to hold it flat. Pour the lemon marinade over the chicken, turning it in the dish. Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight. Turn the chicken 2 or 3 times while marinating.</span></p>
<p style="margin: 0.0px 0.0px 7.0px 0.0px; line-height: 21.0px; font: 14.0px Georgia;"><span style="letter-spacing: 0.0px;">When ready to grill, prepare a hot charcoal fire on 1 side of a grill (or turn a gas grill on low heat). Spread most of the coals across half of the grill. Place the chicken, skin side up, on the opposite side of the grill and place the dish you used for marinating on top of the chicken to weight it. Cook for 12 to 15 minutes, until the underside is golden brown. Turn the chicken skin side down, weight again with the dish, and cook for another 12 to 15 minutes, until the skin is golden brown and the chicken is cooked through. Place the lemon halves on the cool side of the grill, cut side down for the last 10 minutes of cooking. Remove the chicken to a plate or cutting board, cover with aluminum foil, and allow to rest for 5 minutes. Cut in quarters, sprinkle with salt, and serve with the grilled lemon halves.</span></p>

Add ginger and garlic and cook until aroma is released. Stir in chicken pieces and cook until golden brown. Stir in chili powder, peanut butter, and chili sauce. Stir in scallions and coconut milk and simmer until thickened about 3 minutes. Season with salt and pepper. Spoon over rice and garnish with cucumber and cilantro Serve with Basmati rice following directions on the box.</span></p>
